I am close to getting my airplane inspected. I am about to get the data plate ordered. What should I put down as the "Date of MFG"? Is this the registration date or the expected date of the air worthiness inspection?

Yeah, I have a VAF data plate that has spaces for max gross and date - best to ignore those however. You really don't want things on that plate that aren't strictly required.
A lot of blank data plates out there have so many fields that are not required to be filled in! There doesn’t seem to be any advantage to writing War and Peace on my data plate.
