Nothing scientifc here... but if you're LEVEL fkying above a sphere, you'd be ascending. To stay at a constant AGL there should be some nose down pitch to conform to the curvature of the sphere.

An insignificant amount of nose down, though, if we do want to get scientific :) The ratio between the size of the airplane and the radius of the earth is so great, your angle is effectively zero. I believe the actual calculation would be something like angle = 90 - arccos[(a² + r² -r²) / 2ar] where a is half the length of your airplane (let's say 1 meter) and r is the radius of the earth plus your altitude (let's say 6380000 meters, about 6000ft MSL).

so: 90 - arccos[1 / (2 x 6380000)] or 0.000004490264852 degrees of pitch down. Your angle of attack to remain at an altitude given your speed is going to be a much more significant factor.
 
I think the simple answer is yes they are level.
I believe the instructions say to level the longerons to set angle on wheel pants and fairings.
