If I purchase the Ray Allen Pos12 to sense the position of my flap arm, what is it called and where do I purchase the connecting rod that goes between the Pos12 and the flap arm?

You're pretty much on your own to figure out what will work. There's no load to speak of on that setup so a lot of people (including me) used hardware from the hobby store. This is a piece of threaded rod and some nylon clevises that were meant to go between the servo and the flight controls of a remote control scale model. As I recall, I also needed a #52 drill bit to increase the size of the hole in the POS-12 to the correct size for this particular clevis pin.
Fun fact. When I walked into this particular hobby shop in the aviation rich environment of Wichita, I wasn't even close to the first guy who he'd dealt with about this. He asked what it was for and when I told him he just said, "oh, you're building a full scale."
