What next? Baffles or FWF sensor wiring?

I'm happy to report that my avionics install, minus a bad MGL IO extender currently awaiting replacement, is DONE!

So the question is, what next? Should I wire and dress all the FWF sensors and probes or do the baffles first, then the wiring? I'm really trying to avoid taking lots of things apart to facilitate one install or another.

I'm lucky in that my engine monitor module is mounted on the firewall, so there's not a lot of pass-through, just one wire. But I'm looking for potential gotchas.
