Consider the stress on the rivet holding a nut plate------all it needs to do is resist the twisting action of the screw, and only long enough for the screw to start generating enough clamping force on the part to hold it from rotating.
Plus, this nut plate is not going to be subjected to repeated screw removal like many of them are.
While a cheap pop rivet should work just fine, I would suggest getting an aviation grade unit.
