I did all my training at McAir aviation at Rocky Mountain Metro (KBJC). I recently did a BFR through them. They did the ground portion via Zoom, reducing the risks a little. You probably would need to fly in one of their 172s, unless you can get someone to fly with you in your plane off their books.
They also have a full motion Redbird sim on-site, in case you need to maintain 6 month instrument currency. I find that clouds in Colorado usually mean snow or thunderstorms. Pretty rare to have a flyable IFR day around here to stay current.
