One of the benefits of EAB is the ability to customize your build. However, that flexibility to build as you please does bring with it some challenges. Is the desire to "save some build time" your overriding priority? If so, that probably limits the mods you will want to do (and there are dozens you could do).
Very few of the mods I have done so far on our RV-10 build have actually saved build time. Ordering quick build fuselage and wings (I did slow build for skill building and customization) probably is the number one time saver, although with the lead times from Van's reportedly approaching 10 months - that may not work with your schedule.
Cee Bailey windows fit better with less work than the Van's transparencies. You can get tinted windows from Cee Bailey, as well.
The Showplanes cowl has better fit and finish.
A panel from SteinAir, Aerotronics or Advanced will save you months of work.
A full interior from Aerosport or SFSA is available.
Edit - Pre-made lines from TS Flightlines/Aircraft Specialty - definitely a time saver
If your budget and schedule allow, one of the
build assist centers (there are several in the PNW) will dramatically speed up your build, provide you with the technical resources you might need, allow you to see and prioritize some of the mods you might want to do and provide oversight for a high quality build.
