I just purchased an RV6 and noticed that there is a wedge shaped device on the rudder in place of the more conventional trim tab. Is there a reason for this? Can a trim tab be installed? It seems they would be easier to adjust.

A rudder trim tab can and has been installed by a few builders. But Van's does not provide any parts or plans for such an option. The wedge shaped device on your RV is a cheap and very common compromise many builders install. A variety of materials can be used. Some builders use balsawood or in my case a $10 piece of plastic purchased aftermarket and trimmed down in length an 1/8" at a time until satisfied with its "overall" performance. It is held in place by 2 sided carpet tape. It doesn't get much simpler than that.
