Don't laugh, I am installing a KT-76A. The antenna connector is ratty RG 58C/U.
1. Can i solder my new piece of RG 400 to this connector? Is this fairly easy? Or should I give up and take it to an avionics guy?

2. Should I install a pair of BNC connectors 1 foot away from the transponder like it is now?

First of all, de-soldering without melting the dielectric is much harder than soldering. If you go to a shop it's not worth their time, they'd use a new connector.
The existing coax does look bad.
Pigtail? Every connector introduces some loss. But if you don't have one, and you ever need to pull the tray, it's a nightmare (at the least, leave a service loop).
If it were me, I'd get a new connector (probably not cheap), and I'd solder it to a new short piece of coax with a high quality female BNC on its end. Get one designed for RG-400.

I ordered one of these

I just ordered the solderless BNC connector
No difficult soldering and quick disconnect all in one.
Thanks for all replays.

These come to mind:

I did that to get rid of the connectors you are working with on a KN53 with a glideslope. Can't say they work as the airplane hasn't flown yet lol.

Soldering shouldn't be too bad though, its a simple thing. Extras are available on that same website
