Have people experimented with tire ('tyre' in the UK...) pressures on their RV-12s?

The Maintenance Manual and POH both say 20 psi for the nose and 25 psi for the mains (with maximums for both of 28 psi).

The Flight Training Supplement states 25 psi all round.

Has anyone found a particular pressure works for them for steering response and/or preventing nose wheel shimmy?

Since the nose gear does not have a shock absorber, I think it is better if the nose tire is not inflated to the maximum.
