What is the best approach for measuring the angles of aileron deflection?

A Digital Level

Measure angle at neutral position and at extremes of deflection. You could also use a cardboard template.

smart level

I used a smart level. Zero it in the neutral position then read the angles in the up and down position.

Get one of those magnetic protractors at the HD or Lowes or similar (its just really a weighted arrow in a box). Although the magnet part won't help much, it is easy to put the protractor on the aileron when in neutral position, read the angle, move the aileron full up or down, read the angle and subtract to get the amount of deflection.
