Can anyone tell me ... will the GNC 355 ,(175 / 375) provide en-route vertical navigation output to an autopilot? ie, say, pick a crossing altitude for a waypoint?
 
No, the Garmin 2" navigators (GPS 175, GNC 355, GNX 375) do not support enroute VNAV with autopilot output... only the GTN navigators have that feature.
 
The 2" navigators do have a "VCALC" feature in Utilities, which won't provide guidance (purple VDI ticks) but which will compute a TOD and descent rate given a waypoint in the database.

I have an Advanced 6600, with the Garmin 355. I can pull up the FP on the 6600 and enter WP altitudes. It won’t drive the autopilot, but it displays TOD positions, to allow me to bug the altitude, which is quite helpful.
