I just permanently installed the fittings on the fuel selector valve. I really had to turn the fittings hard to get them in the proper position. I used EZ Lube on the fitting threads. But I noticed it doesn?t harden ? just stays sticky. Does it really stop fuel from leaking out?

You should be fine

The threads are pipe threads and they are tapered and it gets harder to turn them the farther the fitting threads are engaged into the threads of the valve body. EZ-Turn is a lubricant between the threaded surfaces, it fills any voids and avgas is not a solvent for it. It never gets hard. Probably more important than the knowledge of the product is the knowledge of, or sensitivity to, the difference between straight threads and pipe threads which are both common in the AN fittings of the fuel systems, oil systems, etc. The seal methods are very different. The pipe threads seal between the threads as they are tightened and the straight threads require something else like a flare interface to seal the connection.
