I'm getting ready for the first engine start and I'm just about to drain the preservation oil, approx how much should drain off before I know it's safe to put the new oil in ?

Difficult question to answer (without knowing how much was put in) however you should drain it all. Drain the sump, Pull the dip stick out, Pull the bottom plugs out before you rotate the prop. Take the oil filter off. Rotate the prop a few turns and let everything drain.

Not much on factory new. I drained about 3 quarts total. A little messy from intake and cylinders (my fault) but in general the process is easy.
