Can 2 separate music devices be wired together for music input to a audio panel?

I realize that you would need to ultize one device or the other and not both simultaneously.

Just checking because my audio panel has one stereo input and I have 2 music sources

You could wire in a DPDT mini toggle switch to select which of the two music sources you want to listen to.

You will loose the signal in from one device in the other. That's an oversimplification, but is bassically true. If you don't want a switch, you need an audio mixer.
