I have read that you pinch the opposite side to trim the rolling tendency. How exactly do I "pinch" the edge of the aileron to trim the aircraft?
 
An easy way to remember is that squeezing the trailing edge make the aileron fly "up". So always squeeze the aileron on the "light" wing.
Best way I've found is to use seaming pliers with the jaws covered with duct tape.
Do just a little each time. It doesn't take much. If you can see that you have squeezed it, you've probably done too much.

Do I have to work (pinch) the whole trailing edge or just for example, the outer part ?

It doesn't seem to matter where you squeeze it. Only do a small 3-4" section and go fly. You'll be surprised at the effect.
