Just for curiosity has anyone flown there RV with just the wheel pants and no gear leg fairings while they where in the middle of installing wheel pants and fairings?

yep. several times. no issues.

I flew for about 100hrs with wheel pants and no leg fairings. no problems to report.

I did it for the better part of the first 40 hours.
No problems at all.
