Did you prime or paint your engine baffle ? Why ?

No.
The coating on the aluminum will last much longer than the baffle will.
No need to paint as no one will see it.
You will get an many opionins as there are options.
Some actually powder coat. Some build to win trophies for pretty.
If all your concerned about is the material being safe as is, it is.

One other reason NOT to paint them. Should you have an engine fire, you will have that much less paint to burn off.

Besides, if they should ever corrode, they are easy enough to replace.
