Default EGT/CHT sensor insulation and wire routing

I have old EGT and CHT probes for Dynon on which the Stainless Steel Braided Insulation is frayed at multiple points. It even nicked me when I touched it a couple of times. The sensors passed all the tests to be functional. Should I use these probes or replace them with new ones? What is best way to wrap these wires?

Also,what is the way you routed your EGT and CHT wires? Point me to any existing threads or links, if I'm repeating the question.

I want to shorten the probe wires. Cutting the insulation might be tough part, which I will cut with a saw and wire cutters, and use PIDG Faston Terminals with Heatshrink will work?
