Default How tight for plate nut screws?

#6 screws for the elevator trim cover.

How tight? I assume it doesn't have a specific torque value like the bolts.

It is a "mechanical inclination" kind of thing. Instead of grabbing the screwdriver in your palm, try holding it with your thumb and forefingers and twist the screw driver with your fingers. You have a lot less power and reduce the risk of breaking them off or stripping them.
