Default Back Riveting Plate

I plan to start an RV7 kit soon and have been familiarizing myself with riveting techniques.

I see that back riveting is recommended on control services. I see that the tool supply houses sell various sizes of these plates.

Is there any reason that you couldn't use various lengths of 3/16 or 1/4 inch cold rolled steel?
