Howdy Mike,
You could turn the new canopy upside down, place the old windscreen in it, find where it sits the best, and mark the perimeter. Cut it large and sneak up on the final size. Use a thin cut-off wheel in a die grinder and make pass after pass til you cut all the way through.
RV-6 plans can be bought on flash drive from Van's at low cost and the builder's manual is in there. As others have mentioned, there is lots of good research material out there for tips and tricks. I liked the RV-14 video for how to do the windscreen fairing.
It is intimidating, it's true, but it is possible. Make some progress and I'll see if I can make some time to swing by and give you some pointers and ideas on how to continue.
