I used rudder pedal return springs on my -6 and -7. You can compensate for an out of trim rudder by adjusting the spring tension. The springs also keep tension on the cables when on the ground.

I'm using the Dynon static ports which I flush riveted in place. Don't know how the Cleavland ports are designed, but the Dynon ports have a fairly large flange.

Easiest way would be to level the aircraft and set pitch offset to 0. You can fine tune it as necessary. Not familliar w/GRT, but should be something in the EFIS menu to allow for pitch offset.
