I would follow the skin with the longeron so that the top of the skin is parallel to the top of longeron. If you let the longeron waver from the top of skin I think you will have problems with rivet...

use a shim

I have been working on my canopy and found the same issue.
I used a thin shim under the canopy skin at the straight section between each hinge. Works great now.

I have one on my RV4. The prop is very well made with about twice the laminations of other wood props. The one I have is more of a climb prop attached to a 160hp 0-320.
