I'm New Here
I might be visiting Vans Aircraft from New Zealand around mid-2018 while on holiday with my partner.

Can any locals suggest good websites for tourist information & things see/do in and around Portland?

Interestingly, (at least to me) a lot of the locals refer to Portland in print as PDX, so you will see that used a lot as an identifier.
 
I have lived in Oregon and SW Washington all of my life and haven't done or seen a lot of what is here. It is a big State. If you can narrow down what you want to do, like fly to places ( The Miseums mentioned can all be flown to ), or activities (sightseeing by car or airplane), hike, etc...we can help you better.
The Coast is always nice but so are the Gorge, mountains, downtown PDX, and High desert. You can tour much of it by plane.
Tons of web sites on touring Oregon, just jump on and start searching. Once you get a few ideas, we can recommend some things to help make it happen.
 
You have options, depending on duration and season.

+1 on http://www.waaamuseum.org/ I was there last month - neat that every plane flies. While in the gorge hike to tunnel falls, hike Mt. Hood, wind surf in Hood River, and grab a beer at Pfriem - you'll be thirsty by then.

While in PDX, eat (options on websites), sample beers, see the rose garden, see a show, buy a book at Powells, go to Vans, and AFS.

Drive south for wines in the Willamette valley or farther south for Shakespeare in Ashland.
